What’s the weather like in the Spring in the Poconos? Anything brides should be aware of?
Spring is my favorite time of year. Generally, our grounds are covered with spring flowers and many, many trees in bloom. Spring is my favorite time of the year for new beginnings. Plus, the picture opportunities up here at Skytop in the spring are endless.
What’s the best way to decide on a menu?
I always recommend focusing on the convenience and comfort of wedding guests. In my experience, a sit-down meal is still a great way to go, with no more than two or three courses. A duet plate works best because it will guarantee you the best service, variety, and a wonderful presentation.
Are there any trends in wedding catering?
A few trends I’m seeing include time travel (going old fashioned), food and alcohol beverage pairings, signature drinks, farm-style seating, and silent cake cutting.

How should a bride plan the day-of timeline?
A day-of timeline is a must these days, but my suggestion is always to stay flexible.
First, begin with determining what time the ceremony will begin and end, and what time the reception will begin and end. Then, work backwards from there to incorporate the details, like if you are doing a first look, or hoping to get all your photos done before the ceremony.
